I mean, need I say more?! I'm serving these babies for dessert on Father's Day and breaking them out again for the 4th of July, oh yeah. To me there is nothing more American than chocolate chip cookies and vanilla ice cream for dessert! I have been making these cookies for so long I can make them in my sleep. This is our family's favorite cookie, a little crisp on the outside and soft and chocolaty on the inside.
Seriously Amazing Chocolate Chip Cookie Ice Cream Sammys
1/2 c. Salted Butter, at room temperature
1/2 c. Butter Flavored Shortening
3/4 c. Brown Sugar, packed
3/4 c. Sugar
2 tsp. Vanilla
1 tsp. Baking Soda
2 1/4 c. Flour
2 c. Semi-Sweet Chocolate Chips
Premium Vanilla Ice Cream
Preheat oven to 375°.
In a stand mixer combine butter and shortening and thoroughly combine. Add sugars and combine well. Add eggs and vanilla and mix for 5 minutes, until the mixture is light and fluffy. (Now is the time to grab a spoon and eat a scoop - this is my favorite part of cookie dough - yumm) Then add baking soda and flour and mix until just combined then add chocolate chips. Refrigerate dough for 60 minutes.
Using a small cookie scoop, place balls on a parchment lined cookie sheet. Bake for 10-12 minutes, until lightly golden brown, don't overbake. Cool cookies completely before assembling.
Remove ice cream from freezer and let sit for 10 minutes. With cooled cookies place large scoop of ice cream between two cookies, gently pressing the cookies together to form a sandwich. Wrap in wax paper or plastic wrap and place in freezer ziploc bag and return to freezer.
Let sit for 5 minutes before serving.
